Complete Light KitchenAs many of you know, The Girl has never taken to cooking. We have managed just fine with her doing the grocery shopping, chopping stuff up, and me doing the actual application of heat to food.

My brother and sister-in-law had us over for dinner a few weeks ago and served us an absolutely delicious meal. Kelly, my sister-in-law is a registered dietician and knows that I’m trying to watch my saturated fat intake. Even with minimal sodium and fat in the dishes that we had, we couldn’t believe how exotic and tasty they were.

That’s when she told us that the recipes were all from Rose Reisman’s book, The Complete Light Kitchen. We were so impressed that we bought a copy for ourselves and over the last week The Girl has actually been cooking. She’s discovered the joy of cooking. She’s still discovering how not to use every utensil and dish in the cupboards during the preparation of food.

I’m sitting at work having leftovers of Swordfish with mango salsa. Yummy.

We cooked this last night. The recipe called for either barbecuing the swordfish, or baking it in the oven. We thought the barbecue was a good idea. I haven’t sparked it up for the year as yet, so this would have been a good occasion.

This is how it looked as I walked out onto the deck towards it:

For some reason, seeing all of this gave me a bad case of the HeeBeeJeeBees, so I shut the lid, ran back inside, and told her that we’re baking the swordfish. Which we did. The BBQ will stay that way until the weather gets a little warmer and I can arm myself with a garden hose.

Although, to tell you the truth, Ameloblast is in that position for most of the day (especially since he’s been retired from blogging).

    Wow that does look quite tasty! Though that’s a pretty big portion of rice, I’m not sure I could finish it all. lol

    And how on earth did that happen to your BBQ? Did you not keep it covered through the winter? lol

    A bird’s nest barbecue should always be accompanied by a starter of bird’s nest soup.

    Nothing seasons a BBQ like a bird’s nest!

    There was that summer (or two, or three) when birds were constantly nesting in our grill, and we couldn’t figure out how they were getting in. We’d burn the nest and clean the grill, and a day later they’d be back. It was especially fun when they’d lay eggs. You’d think the little birds would figure out that a fire-prone place like my grill is no place to raise a family! But, sadly, they never did. The only thing that solved the problem for us was moving.

    I hope your birds aren’t related to ours. They could only be cousins, though, because our birds pulled themselves out of the gene pool.

    that stuff would have probably just burned off anyway. maybe would have even added some nice flavor to the swordfish? but then again, it is someone’s (former) home, albeit a bird’s home in your barbeque. it would have freaked me out, too.

    the meal sounds yummy! i’ve never had sowrdfish before, but i’ve heard it’s marvelous.

    mmm the swordfish looks delicious! I can cook pretty good, but I actually prefer my hubby’s cooking. We used to own our own BBQ restaurant a couple of years ago, and his brisket is the BEST.

    I don’t know if I’d even know how to turn on our grill outside! LOL

    fragile: Actually after I finished that plate I had to finish off The Girl’s as well. It was too much for her. I planned to cover the BBQ over the winter but the snow piled up so high that I never got a chance.

    Mungo: Thanks for stopping by. I’m glad your root canal procedure is working out for you! I don’t think I’ll be using any of the stuff in the BBQ to make soup with though.

    Haley: Birds nests and eggs are an annual problem for us around here. They find the most imaginative places to nest.

    Jeanie: The cookbook unfortunately doesn’t address every-pan syndrome. I learned how to manage that out of sheer laziness. I didn’t want to spend unnecessary time washing and rewashing dishes after I made something.

    Person: The swordfish was really good…but expensive. We’re going to try the mango salsa with Tuna and pork next.

    Lin: The reason that we got this BBQ is because my old one exploded in my face one time too many while being lit…This one has been much safer!

    sounds and looks delisch! did you not have a cover on your grill during the winter?? should have just lit it up and dealt with the stuff that way! NO, I’M KIDDING!!! anyways, i’m happy that the Girl has started to like cooking! and as i wrote on her Facebook wall, i hope she makes this when we come to visit in june! it’ll be the perfect summer meal! and then, i’d like the recipe too please!

    Laney: I didn’t get a chance to put the cover on. I always have great intentions to BBQ in the winter. Then when it gets too cold to put that plan in effect, there’s too much snow on the deck and BBQ to cover it.

    This summer if you bring the swordfish, we’ll cook it. You’ll need to take out a loan for the swordfish though.

    buddy, i can’t take another loan if i needed it for my funeral, i’ll explain when we see you guys face to face. but even if i could, where would i find swordfish in Switzerland???? you say fish and they say what is that?? oh, those creatures who swim around in the lakes? you eat those things? yuk! so, i’m afraid the swordfish would have to be on you, i’ll bring the rice, salad and mango if you want :)
